Pork Rice Stir Fry

Hi guys,

today I’m posting another one of my super fast meals! I’m always on the go and need to come up with supper on the last minute. So this recipe is perfect if you need something fast. Ingredients
  1. 1 cup Basmati Rice
  2. 1 1/2 cups or 300g Pork, cubed
  3. 1 Red Bell Pepper
  4. 1 Onion, minced
  5. 1 cup or 200g Broccoli
  6. 1-2 Tbsp Seasoning Salt
  7. 1-2 minced garlic cloves (could be substituted for 1 Tbsp garlic powder)
  8. 2 Tbsp Roasted Garlic Pepper Spice
  9. 1 Tbsp Tex Mex Spice
  10. salt, pepper to taste
Instructions
  1. Take your 1 cup of rice and boil it with 2 cups of water and a pinch of salt.
  2. In a pan, roast the cubed pork with a little bit of oil.
  3. When the pork is halfway done (usually about 3 minutes) add the minced onion, garlic clove and all your spices. Stir frequently.
  4. While that is cooking, cut your pepper and broccoli. Insert when everything is roasted.
  5. Finally, add your rice when it is fully cooked and stir until everything is evenly.
  6. Taste and add more salt and pepper if necessary. Serve as is 🙂

Mini Donair Buns

These days I seem to be craving donair every second day. So I just had to share this recipe. I love the tzaziki that I make for it and the cooked chicken. If it was up to me, that would be everything I put into it, but you gotta have some vegetables as well. 

I also love baking the buns ahead of time and freezing them for whenever I need a quick meal. It works great for busy days or if company decides to come over spontaneously. 

Once you have made your dough and it had time to rise, you make little (90-120g) balls and roll them out a bit and place them on baking sheets. Make sure they’re spread out, because they will rise in the oven.

Now take a knife and poke holes in the buns.

Take an egg and mix it with a splash of water and spread it on the donair buns. Now take some sesame seeds and spread those on top as well.

NOTE: I had taken an egg white or an egg yolk only with some water – it did not make a difference. I decided to always use the whole egg now since the other half just gets wasted anyways.

Bake it for 45 min or until golden brown at 375 F.

If you want bigger bread, then you can make the dough into 120g balls and roll it out more. They will be thinner and more flat.

Cut almost all the way through and insert your favorite fillings!

Ingredients
  1. 1 1/2 cup or 350 ml warm water
  2. 2 1/2 tsp sugar
  3. 2 tsp salt
  4. 1 tbsp active dry yeast
  5. 90 ml oil
  6. egg yolk and sesame seeds for top
  7. 4 cup or 600g flour
Instructions
  1. Mix everything together in a stand mixer except the flour. Let stand for 10-15 min or until yeast gets bubbly.
  2. Add flour and mix on medium for 8-10 minutes. If necessary, add a bit more flour until dough isn't sticky.
  3. Cover dough and let it rise for 30 minutes to an hour or until dough has doubled.
  4. When dough has doubled, preheat your oven to 375 degrees or 350 degrees for a convection oven.
  5. Take dough and divide into 90-120g balls.
  6. Knead each little dough and roll out until about 1/4 inch thick.
  7. Take a fork and press holes all around the top.
  8. Mix the egg yolk with a bit of water and spread it on each little bread.
  9. Top off with sesame seeds.
  10. Bake for about 45 min or until golden brown.

  1. Same recipe can also make 3 Pizza Doughs and 2 Flatbreads

Best Fettuccine Shrimp Alfredo

This is probably one of my favorite dinner recipes. It has shrimp in it AND pasta! What else do you need? I had been loving shrimp since I was about 7 years old when we went to Spain to a local seafood restaurant. They first looked scary to me, but my dad had convinced me to try one…and guess what? Since then I’m kind of crazy about them.

My hubby loves me making this and it is super great if company decides to come over spontaneously. It seems like a complicated dish, but it really isn’t!

Fettuccine Shrimp Alfredo

Ingredients
  1. 2 cups or 400g Fettuccine Pasta
  2. 1 1/2 cups or 300g Pacific White Shrimp
  3. 3 tbsp Oil
  4. 2 tbsp Cajun Seasoning
  5. 1 tbsp Seasoning Salt
  6. 1 tbsp Garlic Powder
  7. 1 1/2 cup or 360g Whipped Cream
  8. salt and pepper to taste
Instructions
  1. Bring a half pot full of water to boil. Add the fettucine pasta and cook for 10min or according to packaging instructions.
  2. While your fettuccine are cooking, take the 1 1/2 cups of shrimp and peel the tails off if necessary. If not, put them in a pan with your 3 tbsp of oil. Put on low heat.
  3. Now add the cajun, seasoning salt and garlic powder and keep roasting on low heat until the pasta is cooked. Stir occasionally.
  4. When pasta is cooked, drain water and add to the shrimp pan.
  5. Add the 1 1/2 cup whipping cream and mix.
  6. season with salt and pepper to taste.
